How to make the vegetable sauce?

Ingredients:

  • One tablespoon thyme
  • Three big stock cubes
  • Salt
  • One green bell pepper
  • One red bell pepper
  • Three medium potatoes
  • One cabbage (small size)
  • Eight carrots (medium size)
  • Eight Jos tomatoes
  • Five Spring onions
  • Two cooking spoons of vegetable oil
  • One whole chicken

How to prepare vegetable sauce?

Preparations:

  • Wash and cut the vegetables into small pieces: carrots (do not forget to scrape before cutting), tomatoes (remove the seeds), bell peppers and cabbages. Set them aside.
  • Peel, wash and cut into small pieces the potatoes. Blend them into a thick paste. Set aside for a moment.

Cooking Directions:

  • Wash and cut the chicken. Place it in a pot. Add thyme, stock cubes and onions (do not forget to chop them). Cover the pot with water and start cooking.
  • Add salt to taste and some more water if necessary.
  • When the chicken boils, add the vegetable oil and chopped tomatoes. Cover and cook for fifteen minutes.
  • Add the chopped carrots and cook for five more minutes.
  • Add the chopped cabbage and bell peppers. Cook for five more minutes.
  • Add the potato puree and salt to taste. Cover and cook on the high heat for five more minutes.
  • Turn off the heat.
  • Your Nigerian mixed vegetable sauce is ready to serve!
  • It`s best served with fried plantain, boiled yam or mashed potatoes.
